Avant Meats is developing cell cultured fish maw (aka dried fish bladder), a delicacy in traditional Chinese cuisine. Fish maw is typically sourced from either the Chinese Bahaba (giant yellow croaker) or the Totoaba, both of which are on the brink of extinction due to such high demand for fish maw. Avant Meats will source cells from the Chinese Bahaba fish.
