Honey is a sweet, viscous product produced by bees and related insects[1]. Bee honey is the nectar partially digested in the crop of the honey bee (Apis mellifera) or the sugary secretions of some plants or some insects that feed on plant sap[2].

Honey contains 13-22% water, 75-80% carbohydrates (glucose, fructose, sucrose), as well as small amounts of vitamins B1, B2, B6, E, K, C, carotene (vitamin A provitamin), folic acid [3 ].

Prior to the production of cane and beet sugar, honey was the main sweetener in Russian, European and most other cuisines, and was invariably used to prepare those dishes that needed to be sweetened (for example, pastries and jams).

To date, honey continues to be a useful and sought-after product, however, for people with allergies, honey and other bee products, even high-quality ones, are one of the most common allergens[4][5]. In addition, adulterated honey should be avoided, as counterfeiting of this product is widespread.
