Before a sauce called mayonnaise appeared in French cookbooks in the 18th century, several varieties of such sauces existed in Spain and France. Perhaps the mayonnaise sauce originates from the ancient remoulade. According to another hypothesis, it originated from aioli. Finally, the process of emulsifying egg yolk has long been known to pharmacists who have used it to prepare ointments. In 1806, André Viard, in his book Le Cuisinier impérial, modified this remoulade recipe by replacing the roux with egg yolk. In another recipe, an Indian remoulade without mustard, he points out that the binding is facilitated if the oil is introduced little by little. This is the first modern reference to a stable cold emulsified sauce. In the same book, he also suggests a sauce called mayonnaise (the first recorded mention of this name), but this is not an emulsion, but a sauce related to velouté and jelly. André Viard's 1806 recipe for "poulets en mayonnaise" describes a sauce that includes velouté, gelatin, vinegar, and an extra egg to thicken it, which turns into a jelly-like gel. It is not until 1815 that Antonin Karem mentions cold "magnonnaise" emulsified with egg yolk. The word "mayonnaise" appeared in English in 1815. As for the etymology of the name, its origin is unclear, it seems that it first appears in 1806. Hypotheses about the origin of the name were numerous, contradictory and all the more difficult to unravel because their authors were widely known. Larousse Gastronomique 1961 is of the opinion that the word comes from the old French "moyeu", which, among other things, meant yolk.
