Amidori was founded in 2015 by Friedrich Buse and is headquartered in Stegaurach, Germany, and a production facility in Wals-Siesenheim, Austria. Amidori's headquarters in Stegaurach, Germany, has an area dedicated to selling street food to the public made with its products, a test kitchen, and a small scale food production unit. Amidori's production facility in Wals-Siesenheim, Austria was built in 2016 to scale up production of their first plant-based meat alternative product called M¡dori. Amidori works closely with its partners the Fraunhofer Institute and the Emsland Group for scientific experimentation, product development, packaging, and food production.
M¡dori is a Japanese word meaning "green", and is also a synonym for sustainable and ecological. Amidori believes the term M¡dori represents what it wants to achieve with their plant-based products. M¡dori is a vegetarian, GMO free, and soy free meat alternative, that is made through cooking extrusion of locally sourced yellow peas, oats, potatoes, and spices. All vegetables harvest for making M¡dori are locally sourced from polyculture crop fields to ensure sustainable farming practices.
