Their approach is to create a 3 dimensional scaffolding which areis seeded with multiple cell types including muscle fibers, connective tissue, blood vessels, and fat. These cells then grow together into the shape of the stake on the scaffold rather than being combined afterwards manually.

Aleph Farms is a cellular agriculture start-up developing a technology for growing cell cultured meat in a 3D structure. The Israel based private company was founded in 2017 by Didier Toubia and professor Shulamit Levenberg. Their aim is to develop steak which simulates the texture and shape of that from conventional animal farming while reducing environmental impact and loss of life for animals.

Funding

Aleph Farms was a member of the food-tech incubator The Kitchen, a part of the Strauss Group. In 2017 Aleph Farms raised a seed round for an undisclosed amount. The company is also supported by US and European venture capital firms and plans to close a Series A round in 2018.
